If it's the yellow "soup mandel" type, the Brocho before eating this is: Borei Minei Mezonos

If it's made from bread and deep fried, the Brocho before eating this is: Borei Minei Mezonos

If it's made from bread that is specially baked for the croutons (as it would be in a factory), say Borei Minei Mezonos (according to R' Shlomo Zalman Auerbach)

It it's made from standard bread (e.g. at home) then say Hamotzi Lechem Min Ha'aretz

Brocho after eating the proper shiur of this (typically rare): Al Hamichya
