On Eggplant: Borei Pri Ha'adama
On Crust: Borei Minei Mezonos
Brocho after eating the proper shiur of this: Borei Nefashos (because a proper shiur of crust is rarely eaten)
Ideally, one should recite Borei Pri Ha'adama on something else, and then Borei Minei Mezonos on the Breaded Eggplant.
